Need some sharp knives....
Me and the missus enjoy cooking, but the range of knives around that are sharp, is quite scarce.
I just had a look on ebay, and there is a meat cleaver for £120, which is not particularly expensive if you are going to buy a one off knife or 2.
Would like a good carving knife and a veg cutting knife, anyone got any recommendations or makes to get?
ie What does gordon ramsey and the celeb chefs use?

my brother is a head chef, ill ask him what knives he uses, weve got 1 decent Richardsons Sheffield one which i sharpen quite a lot, as i do a lot of cooking.
I think it doesnt matter how decent your knife set is if you dont sharpen it you might as well be using cheap crap.

I used to know someone who had worked as a fish filleter (spl) all their days. They sharpened every knife in the house, even the basic butter knife on a side plate was UBER razor sharp. They just used a grind stone thing. IIRC. Every knife ended up a crazy shape as the metal wore away over time

My mate (serial killer) swears by them.
Joking aside, they were only £80 in a sale and cut anything
except for limes that is, if anybody can find a knife that cuts limes let me know

I have been a pro chef for nearly 15 years working in Restaurants, Hotels and Contract Catering. We use a mixture of knives in the kitchen some globals. They have become a bit gimicky now and there are ALOT of fakes around on the net which are utter crap. The real ones are good but expensive and if your using it for any amount of time they hurt your hand!
There is no point in spending loads of money on one knife (especially a meat cleaver!) because you will end up cutting your hand off trying to do something its not supposed to do! The Germans still make great knives, Wusthof Trident, Gustav Emil Ern are still considered to be 2 of the best. Old fashioned looking but do the job and will last for years if looked after correctly!

I have a set of these currently, they're shit
You only have to glance at one and it needs sharpening. They're great when they're sharp but that only lasts for the first cut

i bought a display briefcase full of knives off some pikeys that came round work last year. suffice to say they are shit, and i can only assume are made from recycled skodas. on the plus side, its a very convinient carry case full of averagely sharp objects incase one wishes to go on a rampage. so long as what you are cutting is the consistency of mashed potato, they come highly recommended, best 20quid i ever did spend
