I have been a pro chef for nearly 15 years working in Restaurants, Hotels and Contract Catering. We use a mixture of knives in the kitchen some globals. They have become a bit gimicky now and there are ALOT of fakes around on the net which are utter crap. The real ones are good but expensive and if your using it for any amount of time they hurt your hand!

There is no point in spending loads of money on one knife (especially a meat cleaver!) because you will end up cutting your hand off trying to do something its not supposed to do! The Germans still make great knives, Wusthof Trident, Gustav Emil Ern are still considered to be 2 of the best. Old fashioned looking but do the job and will last for years if looked after correctly!
