my brother is a head chef, ill ask him what knives he uses, weve got 1 decent Richardsons Sheffield one which i sharpen quite a lot, as i do a lot of cooking.

I think it doesnt matter how decent your knife set is if you dont sharpen it you might as well be using cheap crap.
