To go further, you could store all of the data on the secure machine, and then use a remote desktop session to access the data. That way, there would not need to be any information at all on the local machine. This would mean if they nick it - they get nothing data wise.

On the face of it, Stu's 'problem' seems easy to solve, but each potential solution then opened up another potential can of worms that most wouldn't even consider a problem until it was too late. Maybe being overly cautious, but belt and braces is the way forward when dealing with security related stuff - no point being half hearted as you may as well not bother.
I think Stu now has now been informed of a solution that covers all bases, both in terms of physical security, and data integrity/security (well done that man
).

Hi Ranj, we'd found a workable solution (subject to a bit more testing) but I think your link would have had the edge over ours on price. Luckily for Stu, a friend of his came up with a solution that just couldn't really be beaten by either of ours.
So the well done was for Stu's mate's final solution, but obviously extended to your good self also for what looks like it would have been a very viable option

I like extreme. I needed them to have absolutely no access to any windows files or any website other than mine, not to mention they cant access any files on my network either as all PC's are linked incluidng my backup servers. A Thin Client is a great solution.
Why are you such a negative person?
