Simple answer : Jail breaking allows you to 'mod' your iPhone and install Apps from 3rd party
locations rather than the Apple store
Unlocking allows you to use any SIM from any network in the handset.
You can do one without the other but to be honest you might as well do both!
If you want to know more here's a cracking website.

Unless software has changed, you can only unlock it if you jailbreak, but you can jailbreak without unlocking.
If it's an O2 phone and over a year old, O2 will unlock it (permanently, and legally) for free (if on contract) or for Ł15 (if PAYG). Need to fill out an unlock request on O2's site, they send the IMEI to Apple in California who mark the baseband as unlocked, and after it's been processed, when you next plug into iTunes, the handset becomes unlocked officially. That's how I did mine and it's on T-Mobile with no probs

It's not so much of do iPhone's work with 3, but more so will 3 work wit the iPhone. The iPhone will work with any simcard once unlocked (by Apple/O2) but whether 3 will supply you with the correct APN's to get it working is another thing (tho these can be found on the net quite easily I should imagine - I found my T-Mobile ones with just a couple of clicks)
