Coolant temp sensor is either white or yellow and if it's not plugged in then it will run like a twat and throw loads of black shit out of the exhaust because it will be over fueling.....
The brown plug is for the thermo time switch. Basically its the thing that controls your cold start injector.
The cold start system is VERY basic and there is NO reason that they should not work. Basically you have the injector, thermo time switch a fuel supply and 2 plugs.
The injector has a black with red trace wire to it (on the blue plug) then the other terminal links (not sure what colour wire) to one terminal on the thermo time switch plug (the brown one). The other terminal of the thermo time switch then should have a brown wire on it which is grounded to chassis.
The black/red wire is a cranking power supply so when you turn the key to engage the starter it also supplies the cold start valve with power for the time that you hold the key over. The thermo time switch regulates when the injector work depending on how hot the engine is and also if I recall correctly, if you have been cranking the engine over for 11 seconds or longer, it switches the injector off to try and prevent flooding.
A very basic system with only 2 components. Common faults is an injector failure (sticking open or coil failure), thermo switch failure (open or closed circuit....yours might have failed closed circuit which is why it's been disconnected) or a wiring fault and there is only 2 (3 if you count the link from plug to plug).

Well at least you know what it's for. It's up to you if you leave it disconnected as you haven't been having problems starting it.
If it was the coolant temp sensor for the ECU it would run ok for the first 5 - 10 seconds then run like an absolute sack of shit and cut out, struggle to start again, won't idle below 1500rpm, won't rev up properly and black smoke really badly...
