Data logging
what do you want to log roger?
if you don't mind splicing into the ecu loom (or getting a SECS monitor cable) you can log directly most things like throttle pot, map sensor, etc cos they're basically 0 - 5V signals.
there's many universal dataloggers out there that you could use, it all depends how many channels, how quickly, and to what medium you want to log to, and how much you want to spend.

as i say, throttle position, water temp and air temp are relatively easy as you can use any universal logger with 0-5 or 0-10V analogue inputs.
don't know about the rpm (guess you need a converter to convert pulse at coil or from crank position sensor to voltage).
don't know how to do ignition timing either.
what do you mean by fuel? you want to somehow know the duration of the injectors?
i don't know if it's possible to intercept these signals easily somewhere on the mainboard? would be interesting to find out.

the SECS monitor cable i was talking about is basically a cable that you can buy that will plug into your engine loom where the ecu normally is, it then T's off some cables to the SECS monitor, and also plugs onto your ecu. the point of it is to tap into the signals that the ecu is receiving from the engine sensors, so you could also connect this cable to a universal data logger. see here for more details. to be honest, their web site for cosworth based units is crap, this site for non ford units shows what they are all about much better.
the SECS stuff is all built and designed by Simon who comes on here with the username SECS. the units for universal application reading from an ODB connection can do eerything that you want, unfortunately the cossie doesn't have an OBD connection. PM or email simon for more information, he's very clever and can probably point you in the right direction.
universal data logger, where from? many places. depends what you want, you can go for something from a motorsport supplier like Stack, but it will be expensive. do you want to log directly to laptop? via rs232 or usb? or log to a flashcard?
do a search on the internet, there's too much out there for me to suggest something. as a guide, i would be looking at something like http://www.labjack.com/
if you find out anything about reading from the ecu, post it up for us all to read.

I have a Free Scan for Lotus Esprits as shown at www.ukware.com ,I need some thing like this for Cosworths.

very interesting link roger.
the freescan tool basically interfacs the ecu, mch like the SECS monitors for OBD. i guess nobody has written aprogram to interface to the motorola ecu in this way.
how about the software that people use to live map (pectel or something else?) maybe this combined with an emulator will do what you want.
to be honest, this is now getting way too techincal for me. maybe Stu or Kenny at Motorsport Developments can answer your questions?
