Default head gasket?? crack??

Hi my father in law has problems with his 4x4 cosworth
last year he had a problem after a track day with loosing water which went into oil.
he changed head gasket for a wrc metal multi layer and its done it again?
they guy who done it is sure its all good (work done fitting head)
he has just had it set up at 470bhp and 500torque and checked the oil yesterday to find mayo white oil?
he had the face of block checked and head was machine faced (skimmed)
do these gaskets fail or should he get head pressure tested?

It should hold up perfectly with the head and block skimmed, but so would a composite gasket at that power level, and have a vastly better chance of sealing, with any imperfections, of course there shouldn't be any.
It can come from other places though apart from the HG allowing the oil water to mix, such as the original fit oil cooler modine, is he still using that ?, I would guess not but you never know.
