Selling car but private plate still on

After advice please as I don't want to get stung.
I have taken a deposit on my car and the person is picking it up Saturday. Now, I've been to dvla, paid them £105 to put plate on retention. Thing is, I won't have log book, or new tax /mot with original details on for a good few weeks!
If the person signs the log book Saturday with private reg, doesn't the plate then become there's ?
How should I do this ? They seem trust worthy ....

ive just done this and had all the documents back within a week, but it dosent matter because the date on the retention application is before the date of sale
i let my motor go with the plate then when paperwork came i told the guy to swap over number plates at the end of the day if he didnt swap the plates then he would be the one breaking the law as the private plate was mine

If the plate is on retention doesn't that mean it no longer belongs to that car?
Let him sign the documents with your plate on, because when the DVLA send out the documents with the proper reg, he'll have to take the plates off and put originals on because the system will be updated and that private reg will no longer be associated with that car and if he gets pulled with that private reg won't he get done for blag plates?

I bought my ST with a private plate that the seller was keeping. All he did was transfer the plate and I got the original reg on my new owners docs.
It took him ages to sort so i was tempted to apply for the log book my self which would then make the plate legally mine but thought better of it. If someone did that to me I'd go mental.

I signed the log book and had the tear off part as proof of ownership.
The guy I got mine off I'm not sure what he did after I signed my bit. I got new docs with the original reg from him and had to sort the tax disc and MOT cert after.
Best off ringing your local DVLA office or go down there for clarification.

Why have you got the logbook if the dvla took money to put it on retention?!
If you have paid the dvla they should have your v5, lkeaving u the small tear off. THey will have your MOT and your tax disc ref no. If it's a decent dvla office you might have a replacement mot already.
I'd sell the car with no docs and pass them on when they come back. Then go give the guy a new set of plates when you get the slip to allow them to be made up.

Thats what I'd do and in fact what I actually did when I sold my evo.
Guy took the car, people would have to be mad not to take the car without the log book. I guess it could be stolen but doubt it.
Then I took the original plates to him when I had the confirmation through to change to them. Took him the new MOT and tax disc. THen did the V5 change.
Easy.
To answer new post
Get a receipt written out with sale date/time.
New (old) plates go on when dv;la return the docs. My local office are decent and fast. Depends how good yours are.
