Any of you a wizard in the kitchen?

I didnt know how to cook anything other than pot noodles or ration packs until just before i got discharged from Navy so had to learn quick.

Heres some of my cooking achievements:

Beef casserole:

Just finishing itself off now! just the dumplings to make!

Carlic bread with cheese:

Thank god for turbochargers

cossiecrazys xmas cake (made 4 in total in end!):





mmmm i think i put the semtex on the cake instead of marzipan! must stop keeping things in fridge!!



I did the cossie icing for cossiecrazy as hed helped me loads with stuff on my car!!

Oh and i even made the marzipan and icing from scratch. No preformed ready to roll crap here!!

He said he loved it so cant be too bad!! I thought id overcooked it but when the marzipan and icing is on it softens the outside!

fair play warren i just thought it was the cakes all that other food looks pukka.

i did myself a proper thai curry not long ago from scratch not out a jar and when i did it i thought of your cake thread but thought you might think i'm either sad or lonely to try post up pics about my own culinary attempts on your thread .

but as you've asked, i don't have any in between photo's of me cooking it up but i did it all from scratch i assure you esp cos i can tell you even after washing my hands my nob started to burn after having a piss

i can't stand shite food tbh so wanna get into the swing of cooking my own stuff up more often .

so here it is in the pan, oh yea it's beef thai curry btw.



and then on the plate it was quite hot (spicy) and there is rice on there too but i kinda liked my curry more



to date i'v done that another one but chicken and not as hot, i tried a Caribbean one but sauce out of a jar , and in the past i'v done chilli and pancakes too , oh yea and a few omelets

Warren, in that top picture, are you cooking that on the hob or is it just rested on there for the purpose of taking the photo?

Just need to point out that "Casserole" means "To Bake", so a Casserole is a dish made in the oven. If it's made on the hob, then it's a stew.

I'm ok in the kitchen I suppose. Made a long list of things. Got a few pics on my phone, but no way of uploading them at the moment!

Be inventive, that's the key.

I love cooking and trying new things, but ultimately I can never be arsed! It's way too easy to just bung summat in the oven or nuke it the microwave.

What I think would be a good idea would be if anyone had any good recipes to put them up so people can have a bash, a sort of passionford cookalong, and then compare results!

I love a bit of cooking myself, taste so much better than 'out the packet' crap, and the satisfaction of being able to sit downand tuck into something you've made from scratch is great.

Im wanting to start making some Curry's, but usually make things like lasagne, chilli, soup, burrito's etc

same here... i love cooking and am actually proud to say that I do a pretty good job of it usually. problem with the recipe bit for me is that I tend to add ingredients uintil i think it looks/tastes right, rather than adhering to a specific recipe. e.g. sometimes i do chicken in a tomato and balsamic vinegar sauce with slices of aubergine on top then melted mozzarella on top of that... it's lovely imo.. and although I could show you how to cook it, i couldn't tell you!

Me and my mates are real geeks about cooking curries from scratch, and have bought all the spices etc from Indian supermarkets. We had a curry night last Friday:



We had Calcutta beef (slowly braised beef in spiced milk), Chicken Vindaloo, Mutton Madras, Lamb Balti, Sheek Kebabs, Saffron Spiced Potatoes, Scented Rice, mint youghurt, Naans and Mango Ice Cream (still in the freezer!) all made from scratch.



So much better than any packet sauce or takeaway!

ex chef here so i cook for my family when they want a decent meal,other than that dont really bother,knocked up beef and mushroom stroganoff with pilaff rice for tea tonight,not got pics though,ill bodge recipe up if anyone wants to try it.

just standard really like

beef fillet
shallots
wine
cream
mushroom
garlic
butter
lemon juice
salt and pepper
sometimes chuck a bit of tarragon in


edit to add-pilaff rice
butter
onion
long grain rice
chicken stock
and a tiny bit of lemon juice in there aswell.

Can you put up reciepes!! i havent got any good curry ones and the indian shop wont give me any, he just says go to restaurant


Make this a reciepe thread!!

Warrens chilli:

400g mince
1 large onion rough chopped
2 peppers rough chopped
few mushrooms sliced
1 tin kidney beans
2 tins tomatoes
2 garlic cloves finely chopped
couple squirts tomato puree
1 teaspoon Bovril.
salt and pepper to season
Mixed herbs
chilli powder
paprika
olive oil
Rice

add tablespoon of oil to pan. warm up.
add mince and season
add 1 teaspoon chilli powder
cook until brown and most fats come out meat.

Drain fats off, put mince on kitchen towel in a bowel to soak off more fat.

Soften onions, garlic, then mushrooms and peppers in pan
add 2 teaspoons paprika, 1 teaspoon mixed herb and 1 teaspoon chilli powder and heat the herbs a minute or so before:
adding tinned tomatoes and mince
add teaspoon bovril
drain and rinse the kidney beans.
Add kidney beans
add more spice/herbs to taste
Simmer for about half an hour

Start the rice about 14 mins before chilli is done.

Serves 4!

You will get hang of spices with experience and just sprinkle in about the right amounts with a flick of wrist!

btw warren i use schwartz hot chilli packet mix and its the bollocks

never tried making own spice yet as packet is unbeatable really. i add own spice etc on top but thats the base.

also try asda chilli beans instead of normal kidney beans.

then my 3 "secret" ingredients are plenty black pepper, 2 big cooking style stirring spoonfuls of red wine and also 2 beef oxo cubes crumbled into the browned mince and onion

For curries I've used Spice Box before and got the proper quantities of spices in a handy little pack. Mucho easier than trying to source it all seperately!
