Around 600 - 800 lux what ceiling height have you got? If you give me dim's and ceiling height i'll do you a design and e-mail it over to you.

flourescent are best, hf will use less energy and also not flicker, lamps will alst longer too. not sure what you mean by exhibution lighting tho, for showing your cars off? metal halide spots would be good give a clear blue white light. would also be best if ceiling height it high, over 4m say.
halogens will be blowing lamps all the time, use lots of energy and will be full of shaddows.

i'd guess that 4 x 5ft flourescents per box would give a good light, with a car parked in the box you would have light on all sides of the car and the roof if you spaced them out towards the outside and back and front of the box. say 400mm off each wall. no need for a diffuser imo unless it gets very damp in there then fit vapour proofs.

get strip lights with the "day light/natural light" bulbs.
halogens are a pain in the arse, ok if you want to direct light in a certain area but can cause shadows, which is not always good when working on fiddly things.
