I just took my Safety Devices cage out and am redoing my interior in black. I wanted the stripped down race car look before. Maybe Jaguar ownership has mellowed me a bit but I want it to look good.
Stripped cars are for cars that are stolen recovery or were a bit tatty or actual race cars. If the car is nice and trim, keep it that way. Cages weight a lot and the advantages on the street are slim compared to the weight added.
Plan on going upside down soon?

Do not forget that a street car with roll cage can be very dangerous if you don't wear a helmet. The cage can hit your head and you can guess the consequences. Ok sometimes it can save your life but on a street car (therefore not to be used with a helmet) it can get quite nasty.

For day to day use, once you've stripped the carpet and the sound deadening you'll be pissed off at how loud it is. You and your passenger will be shouting at each other at speed.
It is cool though! Strip it out.
