Default Head gasket?!?!

I've got a s2 done 3k on rebuild and it's started to bubble up in the header tank when I put the heaters on it blows warm then blows cold thought it might be an air lock but been told its head gasket?! The water is not creamy either, any ideas?!?

I maybe in a scarily similar position as you. No bubbles but spits a bit out of the tank cap sometimes. Done about similar miles after build too, Payen headgasket and head n block were checked.

It's almost as if it comes n goes.
