I've got pictures of a Corsa on my laptop at work of an absolutely unbelievable amount of sealer used on a water pump and timing cover gasket. Must have used well over a big tube full (aerosol size tube)! So much so it blocked a water outlet and cooked the head gasket. There was a golf ball sized lump wedged in there!!

Couldn't believe it! This car had already broke down in the past through loss of coolant and then got towed by the AA to an approved repairer. This was that garages repair! We got it with over heating and misfiring issues and we stripped it to find huge lumps of the stuff! I never got to find out which garage fit the water pump.
Thin smear is all that is needed to fill any uneven surfaces but some people can't seem to grasp this!

If im honest i havent used sealant on either CVH builds, just a light smear of grease on the gaskets, even the sump gasket just a light smear and its sealed properly.
Only time i've used sealant is when doing the head gasket on a BMW, needed some well seal on the timing chain housing upper half.

I used some stud lock on my dipstick tube too when i fitted that after machining, just so it didn't move afterwards. But obviously only put it round the part that needed it instead of coating the whole thing.
