definately the heater matrix... dont discount the headgasket etc but try the heater matrix. Fords systems are self bleeding and so there wont be an airlock and in there designs they put the heater matrix at the bottom of the system to prevent any air bubbles getting trapped. As a side effect of this the heater matrix gets clogged with shit.
I took mine out, took about an hour and it aint that hard, just fiddly. I flushed it through with a hose on on highish pressure.

As for the idling, im not sure, have you checked the connectors on top of your dizzy cap as this can effect the idle sometimes, mine was loose and earthing on the block, it made for the shittest running i have ever had lol!

I'd flush the matrix, thermostat only controls water flow to the radiator it's always flowing through the head/block and heater matrix.

But first check the cable for the hot/cold control knob, may have snapped or just come disconnected.

Always check the basics first!!

was finkin that. gna take panel off where the knobs are and check wires first. does that come off easy.

flushing the matrix will come next as it aint a quick job lol

Yes mate, pull the knobs off (), and then just undo the 2 screws you can see!
Follow the cable to where it goes under the dash (get to it from drivers foorwell IIRC) thats where i've had it come off before.

just pull the hoses off the matrix on the bulk head behind the engine and flush it out in situ. no need to remove it.
