I'd flush the matrix, thermostat only controls water flow to the radiator it's always flowing through the head/block and heater matrix.
But first check the cable for the hot/cold control knob, may have snapped or just come disconnected.
Always check the basics first!!
was finkin that. gna take panel off where the knobs are and check wires first. does that come off easy.
flushing the matrix will come next as it aint a quick job lol
