and the side one is for the rad/ecu ,as i bust mine the other day, which was nice,easily done when faffing to get the gearbox out,as its hidden under the coolant pipe.

The S1 and early S2 had 1 coolant temp sensor underneath the inlet manifold in the centre and had a yellow plug on it. This is for the fueling system
The brown one is a thermo time switch and is only to control the cold start valve.
The later S2 88 and 90 spec had an additional sensor on a T peice at the back of the inlet manifold near the runners for cylinders 1 and 2. This is for the ignition system.
