I'd say boost pressure, oil pressure and oil temperature.
EGT would also be one of my favourites. Quite expensive though.
Wouldn't need an extra gauge for water temperature, though. Unlike newer cars the RST has still an absolutely analogue gauge which keeps you informed.
In fact that's one thing I really hate about new cars. Gauges are controlled by the ECU. They always show you that the water temperature is right in the middle, although that's not always true.

Having a oil pressure gauge is all good, but can anyone explain to me in lamens terms what is a good / bad pressure ?
ie. should it be at a certain amount on idle (mine is about 40psi I think) and change if under load / acceleration etc..., mine goes upto about 60psi I think.

i have the following:
oil pressure
oil temp
water temp
egt
afr
volt
fuel pressure
after the labour of spending the last year rebuilding my drag car(i have three escorts) , i firmly believe you cannot be too careful and have fitted everything possible
...especially at 1.5 bar
