Should be pretty easy mate, once the hub has been removed take a screwdriver and pry the front seal out, then remove the dust shield and seal (back of the hub). After that the bearing should just fall out or atleast need only a small amount of force, you will then need to carefully tap out the inner race of the old bearing from the hub.
Hope this helps...
BTW you can use the old race to install the new one...

That's it mate, the metal shroud, yours may not have ever been off hence the difficulty removing it. Try turning it over and tapping it from behind, not too heavy tho don't want to bend it. While your at it, take a large socket and place it in the centre of the hub (where the shaft goes) a few hits with a hammer and it should fall right out.

Right! Got the shroud off but since I've damaged the seal and bearings it's being a right pain and won't shift even with the socket and hammer! Thanks so much for your help up to now, any ideas?

When I removed mine I used a couple of wooden blocks and place the hub between them, with the socket and a heavy hammer a few good whacks and it fell out. You may also want to try some sort of lube, WD40, etc. Worst case you may have to go to your local garage and have them press it out.

Cheers mate, looks like the hub's never been off, it's only done 50k in 16 years so it's probably why it's so tight, I've been belting it with a hammer for half and hour and it's slowly moving (the spline bit) with a 30 mil socket, going to try a vice on it now.
But thanks a lot for your help

Great, mine was a bit tight too but not as difficult as yours. Whats' funny is when I put the new bearings and seals in the center spline part would not stay in, I ended up tying it all together until it was time to install the shaft.
Let me know how you make out.
