Default head skimming

whats the most you can take off a head without messing up the standard compression ratio? the head was skimmed "as a matter of course" by a machine shop and i am pretty sure it hasnt been skimmed before. the head has had 6 thou taken off it. just dont wasnt to bother putting the engine back together if a head that has been skimmed too far will cos probs.... was thinking about getting pistons machined to lower comp just to be on safe side??
my car is going to be running greens and 4x4 cooler stage 3 chip.
what kind and how thick should the new head gasket be?
sory if this sounds as i dont know what i am on about!!

6 thou is about 1cc in combustion chamber volume and will not be relevant but it may not be the ONLY time its been skimmed. the bigger issue is whether the ex valves hit the pistons. its very easy for this to happen if say the cam timing is slightly out and every skim of the head increase the risk of contact. if pistons are standard why not lob a bit off them while its in bits?
