Default Head Gasket?

Been having water lvl problems on my xr3i cab(mk5) for the past week. managed to patch rad this morning and replaced a section of pipe, stopped all leaks.
what i've been wondering i think is true, the heads gone????
what i believe to be too much air in coolant system/rad -exhaust gases??, and moisture in exhuast system. small ammount of white smoke / steam, if you put your had over exhaust you could wash your hands with it! ???
And coolants boiling, overheating within minutes of starting the car.

I'm learning about cars on my own, and just need an expert to confirm that this is right for me? Is it worth getting the gasket changed? or do you guys think the head could have warped? would be easier n cheaper to put a new engine in?
