The way I did it years ago was to replace the modine oil cooler with a sandwich plate take off and run an oil cooler in the front behind a fog lamp and remove lamp , try to keep it away from intercooler for good reason

As it's a stage 3, if you are having too high oil temps, of 120C+ then it won't be a problem putting a oil cooler in front of the intercooler if it is a RS500 type, it will still have more than enough cooling effect for stage 3 even on track.
I've just fitted a oil cooler to mine, but mine is mounted above the radiator, on a "U" shape rail welded to the rad, and uses a thermostatic sandwich plate, I put it here so it is not exposed to flying road debris, ie a stone can't hit it and puncture it.
I have put my p/s steering cooler in behind the slot in the bumper on the n/s, along with my ooooogggha horn ha ha!!
Of more interest what temps are you seeing on track ?

300F that's around 150C, way too hot, so yes you defo need a cooler, I assume you have the std modine oil/water cooler at the moment.
Just look on ebay etc, you want a sandwich plate, as they're known, this replaces the modine that goes between your block and filter(or extension arm on 4wd), this has 2 pipe fittings that then go to a oil to air cooler, get a thermostat sandwich block, they're about £15 more but well worth paying the extra as they ensure the oil is never too cold, they open about 80C, which is really the minimum you want your oil temp.
There are various options on ebay for complete kits, but essentially you need sandwich block, oil/air cooler, pipes, fittings, most kits are 13 row(235mm wide), or 16mm, 13 row should be more than enough unless serious hot day, a lot depends on where it is mounted, mines mounted where it gets hot air draughted away by bonnet vents as well as the grille direct flow, so got away with a 13 row.
Have a look on matt lewis's site as sure he does the kits.
