will it not read a fault on the ecu without all the connectors and fuel injection rail connected?

The only thing that wouldn't be connected would be the injectors and MAF.. technically the ECU will be running on a base map (due to the MAF being unplugged), but it'd be more than adequate for simple spark control.

Any early 92-93 ECU & loom from any zetec-engineered car would be ideal..

Well no, you're gonna have to make them work together.. The zetec loom won't need much more than power from your original loom.. and the tacho output.. and fuel pump perhaps..

your better off using mk5 CVH stuff as it runs carb and coil pack,no ECU stuff to mess with

if you get an esc modual from an early fiesta (mk3 1.1 for example as long as its got a coil pack not a dissy) ) this will use the standard crank trigger from the zetec and a vacume line plumed into the inlet for the advance and they are realy easy to wire up

would it just be easier to get an 1.8 zetec from the mk5 xr3i and run it on that loom with the twin 40s?
