I have just bought a mark 1 fiesta 1 litre, one day it will drive fine, the next day it will keep cutting out unless i have the choke pulled all the way out. Its like its not getting fuel or maybe too much.

Anyone got any ideas?

 

Mate, it has been a long time since working on MK1 fiesta's.But as i remember,I think you have a carb problem.It is a simple WEBER 1V with manual choke.I bet the float chamber is full of crap and maybe the accelerator diaphram is leaking.Take it apart and find out.
