What gaskets to change in a rebuild?

What gaskets to change in a rebuild?
Hey, currently rebuilding a 2 litre zetec ready for my 48mm TBs. Its obvious I need to change a few gaskets but, do they all need doing?
Things like the sump I would imagine, as it would be silly to have to take the engine out once built up trying to save a few ££££.
Also is it worth using the genuine ford items?
