Well it might help if you tell us what you DON'T like. Then we wont go over the same ground.

Does it have to be a Ford?
Are you alright or insurance?

FRSTs are also good choices.
for my money though
Mk1 XR2 or Mk3 XR3i. Ł1500 should get you a pretty good one, and you've got some money left over for mods/repairs.
Decent cars, cheap to run, and rare. Which counts for a lot to me.
Non Ford options include
Pug 205GTI 1.9
Golf Mk1/2/3 GTi
