Ford P100 options

Hi I'm new to the group and I'm new to Fords so I hope this is the most fitting category.
I have recently picked up a 1990 Ford P100 2.0 pinto and my project for this is to make it a decent all round work and play horse so reliable enough to drive around the country to pick up motorbikes or more P100 parts but also with enough power to take it out and have fun on the weekends ie drift or drag events nothing major purely amateur fun.
Engine wise ive been recommended a Cologne 2.9 paired with either a t9 or mt75 gearbox but ive noticed the Essex v6 puts out more power also would i need to change the diff to something like lsd to be more suited to all round driving.
I would like to change the rear suspension set up from the leaf springs to something more adjustable and up to date and possibly even disc brakes.
So my questions to you guys is what is my options for this P100 where should i start my research and are there any decent threads or guides you guys can link me to.
Any ideas and advice would be greatly appreciated as I have only ever worked on motorbikes so while i have a decent understanding of general mechanics I still have a lot to learn about car and the P100

Personally I'd go for a 2.9 24v Granada cosworth engine and a hybrid gearbox. I run this setup in my drift car and it's reliable and gas over 200bhp standard. There was someone (ran?) selling an engine and the 2 gearboxes needed to bake the hybrid in the COSWORT parts for sale section

Hi mate thanks for the reply it's much appreciated as I said I'm pretty new to cars.
That sounds like just what I'm looking for a decent bit of power but still retaining reliability.
What exactly do you mean by a hybrid gearbox?

HI mate, I would go for the 2.9 24v as better engine, more power and still very tuneable.
I still have the engine for sale complete with auto box as it came out of a granada, with loom, ecu and fusebox.
With regards to gearbox, I only have the 2wd MT75 box left as sold the 4x4 box a few days ago so you will need to get hold of that if you want to make a hybrid. No point going Type 9 on it as it will not last long if you plan on driving it hard.
I still have the engine for sale complete with auto box as it came out of a granada, with loom, ecu and fusebox.

Just out of curiosity as I probably won't have project funds for a month or two, how much are you asking for the engine and parts?
