Hong Kong is amazing! Love the place, one of the few places i have been i would quite happily get up and move to.
I went back in 2007 now so cant really remember how much thigns are, but get yourself over to to drinking district Lan Kwai Fong (cant remember spelling, but think thats it). I went for five nights and had a laugh there. Would quite happly go back.

You can see everything in about 3 days.
Was there with the wife last Novemeber and stayed at the Renaissance on the waterfront at Kowloon (Salisbury Road).
1-day (Metro/Cable Car to Lang-Po Island to see the Buddha).
1-day (Hong Kong Island (star ferry), funicular to Victoria Peak, Aberdeen and the Jumbo restaurant at night.)
1-day (Maccau, Jetboat/hydrofoil from the Chinese Ferry Terminal).
