get it insured and pull out documents, mot it, if not already and get that document. now along with log book and the other two previous documents, go to dvla office or postoffice, hand cash over and recieve a little paper disc and insert onto windscreen.

it seems you've not done any of this before
but to answer your question yes you can insure an un taxed car, you can insure a car without mot or tax just can't drive it
, and as stated just go into the post office and hand over your hard earned

I've had a car for 10 years that has always been insured, is sometimes taxed, Sorned when not, and quite often MOT'd.
But only driven when taxed insured and mot'd.
