.... where do they come from? Was there ever a production version? Or are they all chopped vans/hatchbacks?

Anywhere I can find out how one is made?

yeah called the bantam.im on feoc and a guy has a genuine one.south african import.its a lightish blue and will be at ford fair on sunday on feoc stand.nice guy to talk to about info on them
