I don't know much about mapping so I have the following question:
Is it possible to read the chip from a L8 ECU and then copy the maps and adjust them if required so you can programm an aftermarket ECU to have the same programm with out dyno-live mapping? (offcurse with all the engine sensors the same as before, same injectors and only difference would be a coil per plug setup).

It would be possible with the right equipment, but I wouldnt advise it, as if for any reason the aftermarket ecu has a difference reference point (like one being leading and one being trailing edge on the sensor or something like that) it could end up wrong.

I think you would be better off just mapping it properly rather than trying to guess your way to a map from looking at an L8 chip.

The problem is that this programm is very good (it's made in UK) and economical that's why I like to "copy" it because with the live mapping I don't know if it is going to work correct (I know that live mapping is surely better but to be honest I don't trust anyone to do it here...)

what ecu are you using?
there are so many variables you need to look into before doing this tho,

Wright now I'm using a L8 ECU with a custom chip for the specs of the engine. I don't know yet what ECU to use but I'm close to a DTA S80 in case of a 8 injector setup in the future. I heard that DTA is easily programmed... Any other ECU options? I heard good words for Emerald ECU in this forum but not sure if they can drive 8 injectors and 4 coils if it is needed.
