I'm wanting a gsxr like but have been advised to go for a cbr600f for a first bike due to chassis layout etc...

both are good bikes, just depends which you prefer and are most comfortable on. don't know what people are trying to tell you with "chassis layout"

Apparently with the angle of the forks with regards to the chassis, the counter steering of a bike is different and can be more challenging and harder to get used to especially being a beginner. Apparently the cbr has a good layout which does not require as much counter steering which it was advised as it would be a good bike to learn on. I don't know much about the subject myself. Was just thinking if i do buy a gsxr and not go mad, it'll become second nature eventually. That could be a naive thing to assume, i don't know...

you have already been doing countersteering, otherwise you would not have gone around any corners above about 10mph. it's nonsense, if you want a gsx-r then get one and build up slowly. no point buying something for a bit and then changing
