weird boil up

Hi all had to travel to my home town and at about 80 my temp gauge rose to top or normal/red and bounced round to 3/4 and back to red. Keep to 70 and town she stays half way. No water loss. But plenty of air. No rough idle either. Could this be pump stat or pressure cap

Just got back from plymouth to yarmouth. On dash trick looking at the temp. At 70 the temp is between 105-109. Push to 80 hits the high red temp saying 124. Plant throttle count to 5 temp drops to. 115-116 for bit then rises again. Drop speed sits bout 105-108 same as round town.
Changed pressure xap. Heaters not pumping hot air just luke warm. Water bubbling like mad with air. Not convinced on head gasket as not loosing any water and she still goes like shit of shovel with no rough idle or anything associated with leaking head. Wondering if pump is failed

When i had overheating problems on my tddi i changed out the;
-thremostat (overheating went up from 60mph to 70mph)
-Radiator (from 70 to 80)
-cyclinder head temp sensor (overheating sorted, well until the night i killed the engine going to top speed for a few miles)
however it was still boiling and had oil in the header tank, and when i took the old engine out, there was oil in cylinder 3. turned out the pistion ring/head gasket had gone.
I'd suggest changing the Thermostat (£12) first then the cylinder temp sensor (about £30-£34 iirc)
