19's do not affect the handling at all, but running 235/35/19's is the problem!!!
Try 225/35/19's instead.

What width and offset are the 17s, as the tyres don't seem the right size for it, given that the standard car comes with 225s on an 8" rim?

I personally don't like anything bigger than 18s on an Escort and although the 19s don't RUIN the handling, you lose some of the dynamic balance going so large and the extra rotating mass / unsprung weight isn't ideal.

Because the tyre needs to be of suitable size for the wheel, or it will be stretched (in your case if you tried to put 215/45s on). Also the profile is too high, and the car will "roll" on the tyres (as well as looking "odd" ).

The widest Comp MO17 is 8". 235s would be fine, although I wasn't aware of the availability of this width in 35 profile?

Obviously if the MOs were not designed with the correct offset for the Escort (say for a Sapphire instead), they will look pony IMO. So check the offset (which will be stamped on the outside) and check what it is. Ideally needs to be ET15-ET25, but no higher or they will sit too far inset.

Unless the 19's weigh less than the 18's
I wouldn't go any less than 225, and as Mike says, he runs 235, but that's on an 18"

It's the combined weight of the wheel and tyre that is important .

And I run 245/35s on mine .
