Depends on your interpretation of the term "Mapped"

The spark map can be "Adjusted" but it certainly cant be mapped as per most EFi management.

So in these words stu would an ''OFF the shelf'' Chip do as long as a rolling road session is carried out or are there ways which an Ideal Map/Program can be put on chip for a per car case.

The KE-jetonic can not be mapped. It has an electronic correction for the enrichnening/leaning, but it's not microcontroller controlled. It just consists of a couple of op-amps and transistors.
The RSTs ESC-II injection system can be mapped though, but that isn't part of the KE-jetronic. It's a completely separate system on it's own.
