So recently bought an Escort RS1600i that has been standing since 1998.
I've changed the fuel tank, pump and filter, metering unit and fuel pump relay but it still does the same thing, which is start (almost immediately) run at 2,000rpm max (foot to the floor) for around 2 seconds and then cuts out.
Anyone got a good suggestion at what I can test to help define the issue? I'm assuming flywheel sensor or ECU possible ay this stage?

Sounds like its firing off the CSV (cold start valve) which indicates there is at least an initial spark to generate that few second bang.
Have you checked fuel pressure at the injectors, metering head or WUR? If you've replaced the metering unit with a known good unit, I'd be checking the smaller components. The WUR (warm up regulator) could easily be at fault, they love to gunk up and go out of calibration over time, but no point in guessing when a pressure test will rule out immediately. (The CSV bypasses the WUR so doesnt care about what pressure, if any, its seeing).
Injectors are a bit of an arse to test, unless you have access to a flow bench, or are happy enough whipping up a crude little test harness (which isn't difficult, just takes a bit of time).

Thread is for 16v Golfs but the fundementals should be the same?

Has the metering unit being set up correctly?
Sounds like it's not the ECU or the CPS as it won't even start then.
You should also invest in a set of new injectors. They suffer from wear and it's probably still got the first set.
