Pinto's are alloy construction and just have a alternator to drive.
Cossies are cast iron and stronger due to the twin pulley / ribbed belt design which drives pas, alternator, and AC on some cars.
One of the first pinto's to use the stronger type of water pump was the 2.0i sport sierras. From then on they used the stronger type.
same with 2.0 mk3 Granada's

That also depends what sensor you have in the head for temp gauge as there are so many.
you need to borrow a laser temp gun and see what it's actually doing and when the fans come on etc.
fans come on around 92 degrees and go off 87 degrees while on the move should be in the mid 80's.
Think I am running a 82 degree stat.
Hope that helps.

havent had chance to go through it properly as the rocker was off for painting and it’s currently 2 feet in the air in my garage being waxoyled and cleaned with a tooth brush!
once I get the rocker on and put the fuel tank back on I’ll go through it properly!
Don't ! you cannot take the thermostat out on a 4x4 set up, it also directs the flow to other parts of the engine so removing it will give you hot spots
