Nothing springs to mind, but I find being stationary doesn't spill your drink.
Having owned a sapph, I know they have the odd flat surface on the inside.
In fact, compared to new cars it has a dash like a feckin bar.

Perhaps a mk3 mondeo cup holder fitted to where the amplifier goes. They come out at an angle so should clear the gear stick.

The mk 4 golf has some pop out cup holders. Just pull up the arm rest remove the cassette holder and put your cup in there.

There are those nice Saab ones which take up very little room which slide into a very small space then open up:

I believe you can also buy ones that come in a cartridge that is single din size so would slot into the old Ford amp slot if you're not using it.

In fact a quick eBay search comes up with this:

Default Cupholders for Ford Sierra

Found somewhere online that the Vauxhall Vectra "C" has a great double cupholder unit in the front of the rear seat base.
Removed the now redundant amplifier from my dash.
Went down scrappys this morning and had my choice of Vectras.
You don't need any tools to remove the cupholder unit from the rear seat base, lift seat and disengage catches and it pops out. Don't lever the front of the unit as this damages the cupholder.
Whole unit almost fills the amplifier hole, I just wedged it in at the top with a rubber block.
Once you have adjusted it you will clear the gearstick, just.
Easiest mod I have done in ages, wish I had done it before.

Hope this helps someone else.
