Default ford DOHC 2ltr 8v. head gasket. help needed please???

right i have one of these engines and the head gasket had gone. the car was running very well but using water so i knew it was on the way out. then all of a sudden, there was a huge loss of power when you put it under load,,, so time to work on it.

i took it all apart and had the head presure tested ( and it was fine ) and then skimmed.

Put it all back together over the weekend and started it this morning. everything seemed fine when ideling.

took her out for a spin once warmed up and she pulled like a train. 1.5 mins down the road there was a sudden loss of power again. got home and found about a litre of water had disapeared. removed the rocker cover to find whipped cream all over it. gutted.

so,,,,
is there a possibility that there is a crack in the head that wasn't found by the presure test?
is the block warped / or cracked?
or by having the head skimmed, have i increased the compression so much that the new gasket couldn't take it?

i'm open to the fact i could have done the head bolts wrong but in reality, i'm quite anal about stuff like that so i know they where done correct.

any advice?
