will a -31 off a series 2 fit on a 4x4 saph turbo?

depends what you mean by 'fit'... they are the same EXCEPT the rod length - 4x4 needs a much longer rod. You can either get an extender kit and use your existing turnbuckle, or a long turnbuckle to make the rod long enough to reach the actuator.

think -31's of s2's and 2 w/d Cossies are the same unit but 4x4 and escos actual units are different although still being -31's.

yep, s2 and 2wd are the same AFAIK, but 4x4 needs a longer rod. The capsule is the same otherwise.
