Water temp acceptable levels ?

Water temp acceptable levels ?
fitted my pro alloy rad and took my stat out as it was sticking
drove about last night driving arround no higher than 65 degrees on water temp
today put new stat in, warmed it up to 90 degrees and went for a drive
went down to 70 ish
is it ok for it to be this low or is my pro alloy rad tooo good
chip said something abotu piston rings not getting hot enough to expand etc dont want to do it any damage by driving it cold all the time

I read that around 90 degrees Celsius is an 'ideal' temp, but guess this varies given different types of engine. By ideal I mean for oil to be warm enough to have a lower viscosity, helps vapourise the fuel better and reduces metal wear etc.

yeah i calibrated it using the sensor in kettle as it boiled method
was only slightly out like a few degrees
i will continue with my new stat see how i go
i will allways let it warm up to 80 degrees or so first anyway
temp goes up quite a bit when im caining it but just pottering arround off boost temps have been well low
