I'm building a road legal track car and don't really need a Hydraulic handbrake and want it to be mot friendly so going to keep with a cable system but was wondering if you can get a nice alloy one that's just cable operated I have seen cable and hydraulic but not just cable.

Most cars have a lever in the middle...
Given a lever is just a bit of metal with a pivot....it really shouldnt be that hard to adapt.
But really not sure what you're suggesting ?
You want a cable operated handbrake operated by a lever...like all cars have already ?

I'm after an aftermarket alloy replacement to replace the plastic factory handbrake lever, like the hydraulic ones but cable operated! If that makes sense?

You could adapt something, but the handbrake must be able to lock on, and you'd need to find a way of adapting the lever to your cable setup.

Yer I carnt seem to find any! Don't really need hydraulic to lock the rears up on a track car but might have to got the hydraulic route with a cable kit on it. Don't want to go all out with the build then put the plastic factory handbrake leaver in it!
