As above really, what would you recommend as essential guages for hard use/track days?

Bare minimum are revs, water temp and fuel. Others mentioned above are good options but not exactly essential. Loads of road cars on track don't have these options and manage ok.

thats all you need as you want to be paying attention to the track not gauges lol

Oil temp/pressure will do you fine Over standard not much point having air/fuel gauges just for trackdays as you won't be watching them and unless you have a stand alone ecu and a laptop with you won't be able to do nothing about it any way

Get gauges that have warning signs like Defi's. they flash and beep if they reach a present number

Exactly, you don't really need any. It just depends how much money you want to throw at your car. As long as you know you've got fuel in, your ears can gauge revs and when it goes bang.
