not driven to greece, but been through france and italy plenty of times.
main thing is not to speed as on the spot penalties are severe, and to take plenty of breaks as it's a bloody long way.
the tolls are expensive to get across france, but obviously much quicker. if you want to overnight in france, look for an F1 hotel as they are cheap.

drove through france and spain last year
tom tom had the speed camera's loaded, mainly on the toll roads at the service station which is usually half way along the toll road, so easy to spot. I only saw one poilce car on the toll road, which was a scooby parked on the other side with a portable camera, so watch them
the toll roads may only be two lanes in most places, but are empty and the french are disciplined when it comes to staying in the right lane, so they will be alot quicker as most french refuse to pay and use the local routes, which have lower limits
the garages along the way provide just about everything, like some in the uk and rest area's if you do not wish to pay for a hotel
make sure you follow the french rules about carrying the yellow jacket, warning triangle etc as the are strong on that

The rules about equipment vary slightly dependant on the country you are driving through, essentially though cover all the bases, vest, triangle, bulbs the usual stuff, theaa.com lists it all nicely.
I drove far west of Hungary from Debrecen back to the UK, dare I say it was far easier than driving in the UK. Far less stressful on the Motorway/Autobahn/Highways.
It was novel getting used to driving on the wrong side but you get used to it very quickly. Slow and steady is the best advice I can offer.

i travel down that way quite alot to muro lecce just past brindisi. we usually go france/italy as we have cargo in van but france /swiss/italy is faster. view in switzerland is good not much to see in france or italy really. last few times we have went through france/germany/austria/italy via brenner pass which has awesome scenery.
tolls are dear and constant in france as is speeding...none in germany and you have autobahn.
