Default weird problem

hi i have got a escort van and i have a problem with it the coolant keeps going down i top it back up to max a drive it on one trip and then look at it again and it on the min mark but it doesn't go any lower than this even after driving it around for a day or 2 after . I cant see any obvious leaks or any water on the floor haven't had time to get it on the ramp yet but its been doing it for the last couple of months just seems weird to me how it goes down to min in one journey but wont go any lower than min really

my old sierra did this, could it be the cap not sealing properly maybe.
