Like what has been said, buy on the body, not the engine. They can be pulled out of metros for cheap as hell. How many miles does your missus do in a day and on what kind of road? If theres motorway work then you may want to consider a later MPI model with a 2.7fd though these also rust quicker than the earlier models. The radiator set-up means that the engine bay is well ventilated but I have seen a few that have overheating problems in traffic and 1/4 but never encountered the same problem in mine. Other than that, get yourself onto www.theminiforum.co.uk, buy one and get yourself to the IMM in brum this year.

She gets the train to work as theres no parking and I have a car already so it mainly going to be used as a fun car. She wants a hobby we both enjoy so we get to spend a bit more time together etc. It will probably do 5000 miles a year max

Judging by the ones we have seen in the classified add we hve come to the conclusion we are going to have to travel. There is a really nice example in London that we might go and see.
mate mini man in solihull by me are renowned for good minis i'm sure he's been on the tele and stuff because of it, he's supposed to no them inside out, hence the name mini man, and he's always got shiny examples on his forecourt it's always worth a look on the net i'm sure he'll have a website, i'm not a mini owner but i'm sure a probe over the phone will give you a good idea about him
