the back of mine isnt too low yet very hard, was looking at dropping the back to 60mm, the front is quite low though but arches are rolled.
thing im worrying bout with the 195's is the walls getting too hot?

Sorry but anything other than 215's look wank on Esc Cos rims on an RST imo.
I've had Esc Cos rims on 5 out of 6 of my S1's & I've had 215's on al of them without any probs at all.

I didn't have to mod the arches at all but I never used to lower the cars too much & I made sure I had a proper suspension set up bud albeit rather bumpy

You can use bigger tyres as yours are ET35, escos wheels are ET25...

As AJ has said. 215/40R16...

well i've got 195/40/16's on mine they did ok 130+ @ brunters

But that was in a straight line

anyhoo i'd get the 215/40/16's of you are tracking it as there is minimal stretch on the tyre wall and they don't look too

was talking with jim earlier and he mentioned how big r888s come up so was wondering what a 205/40/16 would be like as i dont want to go too wide as i know it will rub so may look into them
