anyone know about chefs knife sets
ok seen that most pro chefs seem to have a knife roll thing with all there knifes abit like a tool kit
anyone know what a decent set is and where to get em as im fed up of wanky knifes so thinking getting a decent set for piercing the lid of my microwave curry

Ive got a set of sabatier ones which are nice. Also got a lovely chinese cooking knife, looks like a meat cleaver and its fecking sharp. Global are very good, but once they lose there edge there are quite difficult to get sharp again. Which ever ones you do buy it best to sharpen with a steel little and often.

get some global ones. superb, dont buy of eby they are fakes for the large part. i get mine from here www.nisbets.co.uk

I echo the points above me, Global knives are excellent (use a diamond steel little and often and the global wet stone to bring back the edge, at a 45degree angle) I always bought from nisbets.
victrinox are also excellent knives, i always liked the rosewood handles ones. Eith company are knives you will buy once and if cared for never have to replace. I was over 6 years in catering and i've never had to replace one to this day and im out of that trade now for 3 years.

And whatever you do, dont buy stainless steel. Its very hard to get a good edge on stainless. Although its very hard to use a steel if, like most folk, you dont know what you;re doing.
