MO's seem to be a popular choice with these brakes

you have 4 options! Long list hey
1. Super T's
2. Rondells
3. RL7's
4. Comp Mo's
beleive me i know....i have the brake set-up you have described..
and was in the situation of what wheel to pick!......
i went for MO's as u can buy them brand new...with a ET38 7.5x17 offset brakes fitted lovely!

you can get 355mm watercooled 6 pot AP's under the right offset Rl7's or Mo's.
The brakes in my avatar go under most motorsport 17's

I had 325mm hi specs under 16" rl7's and another gtir owner had 330mm ap 4 pots under 16's aswell
so 17's should clear easily
