if you have been watching it from the start and have your system set up to record the past 60 minutes then it will record the last 60 minutes if you haven't changed the channel inbetween to avoid them ad breaks
if you have the system set up to record teh previous 30 minutes then that's what it'll record when you press the record button
what you then need is to be able to plug the sky box into computer of some sorts or a recording device
i've got mine hooked up to the dvd recorder with built in memory card readers so i can record directly to the memory card and then put it onto the computer
there are other devices out there such as hand held avi players that you can hook up via scart leads which i used when i was filming my track day sessions but a dedicated dvd recorder (tesco's were selling their own brand makes for £19.97 the other day, with hdmi conections) so that's going to be the esiest way to do it
you will then need some method of converting the dvd file to a file you can view on the computer and upload to youtube, but again, that's easy as most of the players wil let you view and grab the files to save to your pc, wher you can manipulte it to whatever you want to do with it
i use windows movie maker as this seems to cover almost everything
